Chef Paolo Monti's Italian Culinary Classes

These one to seven-day Mediterranean cooking and wine courses feature cooking instruction by Chef Paolo Monti, chef/owner of the Hotel Carignano Lucca, Tuscany - Hotel Royal Sporting in Portovenere, as well as other chefs in different locations. The courses include visits to fish and vegetable markets, wineries, and a variety of food producers.

Locations include Tuscany, Liguria, Piemonte, Emilia Romagna and Sicily. The menus reflect the specialties of the region.Cost ranges from €1450-€2300 and includes shared room, meals and excursions. Single supplement €250-400. Cooking and hiking or trekking programs in Cinque Terre are also available.

Chef Paolo Monti's cooking classes are based on Mediterranenan cuisine and "Instinctive Cooking" using fresh herbs and ingredients and incorporating the shortcuts great chefs use. Lessons include an extra virgin olive oil tasting and lesson on the basic ingredients of Italian cuisine: herbs, spices, fresh pasta, meats, desserts and wine. The dishes selected are surprisingly easy to prepare and at the same time look impressive and taste delicious.

There is a lot of hands on cooking and each class includes 8 to 14 recipes, concentrating each day on one aspect of Italian cuisine. Participants learn a number of classical antipasti, pastas, fish and meat dishes as well as many vegetarian dishes, desserts, plus more adventurous Italian gourmet dishes that will please friends and family! The programs include winery visits and a wine tasting.
